Chicktion Parmagiana
original recipe by Diane Thompson

1/2 cup onion, chopped
1/2 cup red bell pepper, chopped
1/2 cup mushrooms, chopped
1/2 cup zuchini, sliced
2 cups spaghetti or tomato sauce
1 cup panko (bread crumbs used for tempura) or regular bread crumbs
1/3 cup grated parmesan
1/2 - 2/3 cup fat free Italian salad dressing
1 box Morning Star Chik Patties (4 patties)

Saute onion in olive oil until soft, add remaining veggies and saute until they begin to soften. Add sauce and let simmer. Spread some sauce in the bottom of a casserole dish. Combine panko and parmesan in a bowl. Dip frozen Chik Pattie into the Italian dressing, then into the panko mixture. Place into casserole. Coat all the patties. Pour the sauce over the top of the patties. Bake at 400 for 20 mintues. Top with more parmesan or mozzarella before serving if desired.
